I tried an adapted version of this recipe for zucchini bread muffins a few weeks back, and to my surprise – Ellie really liked them! Do give it a try. Your little one may surprise you too. 😉
I made a few changes to the recipe: I couldn’t find oat flour, so I used 3 cups of whole wheat flour instead. And I used only 1/4 cup of maple syrup (I wanted it to be less sweet), and I didn’t add any nutmeg spice to it because I realized mine had expired (oops!).

It still turned out very lovely, and we had it for a few of our breakfasts.
Have you tried cooking with zucchini? I’m a total newbie to it. It was not a very simple recipe, but it was fun and I enjoyed using the cloth to twist out the moisture. Ellie enjoyed watching me work hard making these muffins. The apples and carrots added a lovely sweetness to it, which is possibly why Ellie liked it so much.

Lately, I have been trying to bake with Ellie too. It requires a lot of patience and grace on my part, but the look on her face as she participates is priceless. It doesn’t take a lot to make our little ones happy!
